Combining precise angle control with the patented 3-step AngleSelect system and Diamond Hone technology - which has made Chef'sChoice sharpeners become the world's most recognized and preferred choice of top chefs worldwide the Model 1520 sharpener is the perfect solution for restoring and recreating sharp edges on all types of high-quality knives. The Chef'Choice Model 1520 electric knife sharpener will quickly and conveniently sharpen all high-quality knives, including American, European or Asian knives, knives with straight or serrated blades Santoku knives and traditional Japanese knives with oblique blades, including thicker Deba-style blades, as well as sports knives and pocket knives. The 1520 will apply a better geometry than the gfactory setting to nearly all knife blades using a single, versatile sharpener. To sharpen Asian-style knives or modern European/American-style knives at a 15-degree angle, Steps 1 and 3 are used. To sharpen knives at a 20-degree angle, Steps 2 and 3 are used. The initial steps of sharpening and refining the edges use 100% abrasive diamonds, while Step 3 polishes the edge with a flexible sharpening/polishing disc to produce a super-sharp, polished edge, free of microscopic defects. Step 3 is also used for sharpening serrated blades.
