AngleSelect® Diamond Hone® manual knife sharpener from Chef's Choice® is suitable to sharpen the blades of European / American and Asian style knives and serrated knives at an angle of 20 degrees and 15 degrees, respectively.
The manual sharpener has 3 sharpening stages which are to be used as follows:
1. The "Asian" module is suitable for 15-degree angle Asian knives. The knife blade is then polished in the "Polishing&Serrated" slot.
2. The "Euro/Amer" module is suitable for European and American style 20-degrees angle knives. The knife blade is then polished in the "Polishing&Serrated" slot.
3. The "Polishing&Serrated" module is suitable to sharpen serrated knives and to polish European / American and Asian knives.
With an elegant design and compact size, this 3-stage manual knife sharpener is suitable for kitchen and domestic use knives, Santoku knives, sports and pocket knives and serrated knives.
The sharpener will quickly and easily restore the 20-degree blade edge of traditional European / American style knives and a 15-degree blade edge for Asian style knives and modern Euro / American style knives. Using 100% diamond abrasive discs, a precise angle control and an advanced sharpening system, the device creates a super sharp edge that is stronger and more durable.
Angle Select M4633 sharpens the entire length of the blade, from tip to handle. The sharpener has ergonomic handle and can be used by both right-handed and left-handed people. Slip-proof rubber feet attach to the worktop.
Note: Knives with serrated edge get sharpened using only the stage marked with "Polishing&Serrated". The special diamonds of that stage create sharp "micro-blades" along the dominant teeth, enhancing the cutting effect and reducing the tearing effect, typical for serrated blades.
It is not necessary to sharpen the sides or the spaces in-between teeth. Do not use the "Euro / Amer" stage for Santoku Asian knives or other 15° blades. Product designed and assembled in the USA.
